Low Carb Turkey Eggroll Bowl

It seems the older I get, the harder it is to lose weight.  That coupled with the fact that I am Hispanic (love rice and beans) and a Baker (love making cakes and goodies), my challenge to lose weight seems to be a constant battle.

Recently, my husband and I have made a commitment to get healthier.  We are making a true effort to lose a little weight.  Dan always blames me for his gaining weight because he says I’m such a good cooker.  While that may be true, with a few tweeks to the way we eat, we will both be well on our way to slimming down.  I’m the first to admit that I’m not a fan of exercising.  However, I also recognize that I need to make a few changes.  This includes changing my family’s lifestyle and eating habits.  So, I keep striving to make changes in the way I cook so my family can still enjoy delicious meals.  When eating a low-carb meal, we don’t feel terribly deprived of some of the dishes we love to eat.

We both need to lose weight but hate to feel like we are limited to eating only salads.   As a result, we’ve decided to take a low-carb approach to our diet.  Low-carb dieting has worked amazingly for me in the past.  My husband also seems to lose weight consistently when we reduce our carbs.  In addition to lowering carbs, we try to steer clear of sugar.

The advantage of a Low-Carb Diet is there are lots of foods you can eat and not feel deprived. 

I’m always trying new recipes.  I also like dissecting recipes so I can re-create them in a low carbohydrate form.  From breakfast, lunch, dinner, snacks and desserts, you really can live a low-carb lifestyle and enjoy delicious foods.

This Low Carb Turkey Eggroll Bowl is delicious and filling.  You can enjoy all the flavor of an eggroll without the deep fried  eggroll wrapper on the outside.  I decided to create this recipe with ground turkey since I had it on hand.  You can always replace the ground turkey with ground chicken, beef or pork.

Finding an simple recipe using ground turkey isn’t always easy, so I hope you love this recipe as much as we do.

You really do have a lot of choices when enjoying a low carb diet.  Checking labels for the carbohydrate count is an important key to making this lifestyle change work.  Ingredients such as oyster sauce has some carbs in it.  However, the carbs in oyster sauce is not a large amount considering we are using it here in this recipe as a whole.

The fresh ginger really makes this recipe definitely taste like delicious Chinese take-out

Some of the ingredients I used in this recipe are specialty items.  The ingredients can be found online or in your local market.  If you’re not familiar with Oyster Sauce, it’s an ingredient used in lots of Asian meals.   If you can’t find it locally in your market, I have provided you with a link where you can buy Oyster Sauce.

Oyster Sauce is made with an oyster extract.  It creates a whole different level of flavors when cooking any type of Chinese dishes such as egg rolls.  I was able to dissect my standard egg roll recipe to create this dish.

Low Carb Turkey Eggroll Bowl

This recipe is great if you are enjoying a low carb lifestyle or just enjoy the delicious taste of eggrolls in a bowl.

Ingredients
  

  • 2 lbs. Ground Turkey
  • 1 tbsp. Canola oil
  • 2 tsp. Black Pepper
  • 1 tsp. Salt
  • 2 tsp. Garlic Powder
  • 1 diced Medium onion
  • 16 bag Unprepared Coleslaw Mix
  • 8 oz. Fresh Bean Sprouts
  • 1 tbsp. Fresh Grated Ginger
  • 8 oz. Water Chestnuts, diced
  • 1 tbsp. Oyster Sauce
  • 1 tbsp. Soy Sauce
  • 4 Green Onion, sliced
  • 1 tbsp. Sesame Oil

Instructions
 

  • Pour canola oil into a large skillet and heat on medium.
  • Add ground turkey into skillet and begin to brown.
  • Mix fresh grated Ginger, Oyster Sauce and Soy Sauce together in a small bowl and set aside.
  • Season ground turkey with salt, pepper and garlic.  Add diced onion to skillet and continue cooking with the ground turkey.  
  • Once the ground turkey is completely browned, add the entire bag of unprepared coleslaw mix to the ground turkey.  It will seem like a lot but the cabbage will cook down.
  • The ground turkey will give off some liquid and you may wish to pour half of that out before moving onto the next step.
  • Once the cabbage has cooked down a bit, add the bean sprouts to the skillet mixture. 
  • Strain off the liquid from the water chestnuts.  Pour water chestnuts into skillet.
  • Pour the Ginger/Oyster/Soy Sauce mix over the entire dish and mix everything together.
  • Add sliced green onions to skillet and cook for a couple of minutes.
  • Once the entire mixture is cooked and vegetables are tender, sprinkle the entire dish with sesame oil and mix well.  Cook for one more minute and it is ready to be served.
